Savory Gigantes Plaki (Baked Giant White Beans)

This simple and traditional Greek dish is both healthy and hearty. It is delicious served on it its own and also great on toasted bread.

Instructions

  1. Preheat the air fryer to 380°F. Lightly coat the inside of a 5-cup capacity casserole dish with olive oil cooking spray. (The shape of the casserole dish will depend upon the size of the air fryer, but it needs to be able to hold at least 5 cups.)
  2. In a large bowl, combine the butter beans, tomatoes, tomato paste, garlic, onion, salt, and olive oil, mixing until all ingredients are combined.
  3. Pour the mixture into the prepared casserole dish and top with the chopped parsley.
  4. Bake in the air fryer for 15 minutes. Stir well, then return to the air fryer and bake for 15 minutes more.
COOKING TIP:

If you are unable to find canned butter beans, simply soak dry beans in water overnight, then drain and mix with the other ingredients. Add 10 minutes to the cook time.
