Roasted Whole Red Snapper
Roasting a whole fish is a classic Mediterranean preparation for seafood. If this is something that appeals to you, reach for a whole red snapper, which has a sweet and nutty flavor. Season the skin with spices and stuff the cavity with garlic and fresh herbs. In less than 45 minutes you’ll have an impressive and delicious main dish for your weekend dinner party. Serve it with rice pilaf or quinoa and your favorite vegetable side dish.
Instructions
- Preheat the air fryer to 360°F.
- In a small bowl, mix together the salt, pepper, cumin, and cayenne.
- Coat the outside of the fish with olive oil, then sprinkle the seasoning blend over the outside of the fish. Stuff the minced garlic and dill inside the cavity of the fish.
- Place the snapper into the basket of the air fryer and roast for 20 minutes. Flip the snapper over, and roast for 15 minutes more, or until the snapper reaches an internal temperature of 145°F.
INGREDIENT TIP:
If a whole snapper is not available at your seafood counter, you can use snapper fillets. In this case, add the garlic and fresh dill on top of the fish before roasting and cut the cook time down to a total of 15 minutes.
