Pesto Shrimp with Wild Rice Pilaf
Pesto, a cornerstone of Mediterranean cuisine, is a blended sauce traditionally made with olive oil, fresh basil, garlic, pine nuts, and Parmesan cheese. It can be used on pasta, pizza, vegetables, fish, and meat. In this dish, it brings a lovely, bright flavor to the shrimp, and it's become one of my favorite ways to serve it.
Instructions
- Preheat the air fryer to 360°F.
- In a medium bowl, toss the shrimp with the pesto sauce until well coated.
- Place the shrimp in a single layer in the air fryer basket. Put the lemon slices over the shrimp and roast for 5 minutes.
- Remove the lemons and discard. Serve a quarter of the shrimp over ½ cup wild rice with some favorite steamed vegetables.
INGREDIENT TIP:
Keep a 1-pound bag of peeled and deveined shrimp in your freezer for nights when you need a quick option for dinner.
