Beef and Goat Cheese Stuffed Peppers
Many Mediterranean countries have their own versions of stuffed peppers. In Italy, the stuffing may include a saucy tomato filling, while in Spain you may find them stuffed with chorizo and Manchego cheese. Moroccan stuffed peppers may include lamb, couscous, raisins, and cinnamon. The possibilities are endless. This version is made with beef seasoned with herbs and spices mixed with rice and fresh tomatoes, then topped with creamy goat cheese. Use any color bell pepper you like, or use two different colors!
Instructions
- Preheat the air fryer to 360°F.
- In a large bowl, combine the ground beef, rice, tomatoes, garlic, onion, oregano, salt, pepper, and allspice. Mix well.
- Divide the beef mixture equally into the halved bell peppers and top each with about 1 ounce (a quarter of the total) of the goat cheese.
- Place the peppers into the air fryer basket in a single layer, making sure that they don't touch each other. Bake for 30 minutes.
- Remove the peppers from the air fryer and top with fresh parsley before serving.
VARIATION TIP:
You can substitute feta cheese for the goat cheese, if preferred.
