Instructions

  1. Preheat the air fryer to 380°F. Lightly coat the inside of a 5-cup capacity casserole dish with olive oil cooking spray. (The shape of the casserole dish will depend upon the size of the air fryer, but it needs to be able to hold at least 5 cups.)
  2. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and onion and cook, stirring occasionally, for 5 minutes, or until the mushrooms begin to brown.
  3. Add the garlic and cook for an additional 2 minutes. Transfer the vegetables to a large bowl.
  4. Add the barley, broth, thyme, salt, and paprika.
  5. Pour the barley-and-vegetable mixture into the prepared casserole dish, and place the dish into the air fryer. Bake for 15 minutes.
  6. Stir the barley mixture. Reduce the heat to 360°F, then return the barley to the air fryer and bake for 15 minutes more.
  7. Remove from the air fryer and let sit for 5 minutes before fluffing with a fork and topping with fresh parsley.
